Combine salsa and preserves; stir into skillet. Bring to a boil. Reduce heat; cover and simmer for 2-3 minutes or until heated through Serve with rice. Yield: 4 servings.<br /><br />I normally don't measure though and just put the amount of chicken I want and season and add those ingredients until it takes perfect. Turn the chicken over and season it the same way. Then, add a bit of water to the pan and put a plate or glass covering over top of the pan. Let it sizzle. Turn over the chicken about every 2 minutes and add water as necessary to keep a very thin layer on the bottom of the pan. As you cook it slowly, on low heat with the lid on, the water/steam will make the chicken really most and juicy in less than 20 minutes when it gets to be evenly brown. You can also throw on some red pepper right before it's done to keep it spicy. I like this a lot. These are great to throw on some mashed potatoes or rice w/soy sauce.
