chicken enchiladas!

guess what?

i have another super easy yummy recipe for you!


we made chicken enchiladas last night and it was another huge success!


it might seem silly that i get so excited about actually making dinner, but it's really an amazing thing!

i honestly don't know how i survived in college... i hardly ever cooked anything of substance.


anyway, most of you probably already know how to cook enchiladas, but just in case there are any other newlyweds like me that are clueless about cooking, this is for you!

just so i can give credit where credit is due...

all of the (2) recipes i've shared on this blog are from an amazing cookbook i got for my wedding.
it's called "The I do cookbook for the bride & groom" written by two ladies in my parent's ward.

basically it's full of very simple very delicious recipes.

i always hated trying to find recipes because they always called for things i've never even heard of or asked me to do things that i didn't understand.


anyway, back to the recipe:

(it's originally a beef enchilada recipe, but i like chicken more so i substituted.)

1 pound ground beef (or chicken, or shredded beef)
1 (10 3/4 oz) can cream of mushroom soup
1 (10 oz) can mild enchilada sauce
6 (10") flour tortillas
1 cup grated cheese
lettuce, sour cream, guacamole (all optional)



-i wanted the chicken to be really tender and easy to shred so i slow cooked it in a crock pot on high in some chicken broth for about 6 hours.  it was super easy to shred and super tender.  yum!
-then you mix together soup and enchilada sauce in a saucepan.  and heat it until hot and bubbly.  (i may have burned the bottom of mine because of our ghetto (i mean, retro) stove).  
-spray a 9x13 pan with cooking spray and pour half the soup/sauce mixture into bottom of pan.
-place tortillas in microwave, cover with paper towel, and heat for 20-30 seconds.
-preheat oven to 350 degrees.
-spoon about 3 tablespoons meat in tortilla (i just guessed on this...) and sprinkle cheese inside.  fold edge of tortilla over and place in pan over sauve.
-spread remaining sauce over top and sprinkle with cheese.
-bake uncovered for 25 minutes or until very hot and bubbly.

it was super delicious!
i do wonder if i could of used something else besides cream of mushroom soup, because i'm not super crazy about mushrooms, but it was still great.

taco soup.

some of you have asked for that taco soup recipe i mentioned last week.

here it is!  it's super easy.


TACO SOUP

1/2 pound ground beef
1/4 cup onion, chopped
1 package taco seasoning mix
2 cups water
1 (15 ounce) can kidney beans
1 (15 ounce) can whole kernel corn
1 (14.5 ounce) can diced tomatoes
corn chips

1. in a large saucepan, brown ground beef with inion.  drain.
2. get a large pot, put in meat and stir in seasoning mix and water.
3. drain kidney beans and corn.  add to mixture.
4. mix in tomatoes.  simmer 20 minutes.

makes 6 cups.

serve with chips and whatever else!  we added grated cheese, but my recipe also suggests: sour cream, sliced avocado, chopped tomatoes, chopped green onion, and cilantro.

we also decided to double the recipe, so we can have left overs for lunch.
