success.

my definition of success has changed through different life phases.


success in this phase of life is defined as:

finding a meal that is easy and delicious.



i lack pretty much all cooking skills.
i didn't even know there was a correct way to cut a tomato.
(did you know this?)


tonight i cooked the best meal we have had since our marriage 4.5 months ago.

taco soup.



do you know how easy taco soup is???

i'm a huge fan now.

and so is lincoln.


we are stuffed to max and have washed up on our bed like beached whales.


what are you favorite super fast super easy recipes?

i want to hear!

any crockpot meals?  i like those too.


we both get home from work at about 7:30-8:00, so we don't exactly like to spend a lot of time cooking.

Mmm...that taco soup looks yummy :D I know roast beef that cooks all day in the crockpot is super yummy and most always falls apart (like melt in your mouth yummy). That and pork chops with potatoes cooked with with mushroom soup (also yummy.

crock pot chicken... 5 chicken breasts 2 cans cream of mushroom 1 dry packet zesty italian dressing cook on low all day..when ready to eat melt 8 ounces cream cheese in microwave and add to chicken..serve over rice. it makes a lot. we dont like eating the same thing all week so i freeze half.

Here's an easy peasy crock pot recipe!
*4-5 frozen chicken breasts
*cover with salsa of choice
*cook on low for 4-5 hours
*shred with fork
~serve on tortillas with your favorite toppingos (olives, lettuce, tomatoes, cheese, guacamole, sour cream)

I think it's cool that you made chili (okay, taco soup, but really, close enough) on the same day they pulled the miners out in Chile. Maybe that's a stretch, but I think it's a cool tribute in a way. Weird thing is, I was going to make chili tonight too.

as for fast and easy... swiss steak in the crock pot. it really is the easiest meal ever. and yummy too.

I'm a fan of grilled ham and cheese sandwiches. The secret to a great grilled cheese sandwich is DeVerle's seasoning.

Here's one: Let some chicken strips thaw, heat your range to about a 4 or 5, spray a pan, throw the thawed chicken in and LOAD on top of it some garlick salt, lemon&pepper powder, and whole oregano. Turn the chicken over and season it the same way. Then, add a bit of water to the pan and put a plate or glass covering over top of the pan. Let it sizzle. Turn over the chicken about every 2 minutes and add water as necessary to keep a very thin layer on the bottom of the pan. As you cook it slowly, on low heat with the lid on, the water/steam will make the chicken really most and juicy in less than 20 minutes when it gets to be evenly brown. You can also throw on some red pepper right before it's done to keep it spicy. I like this a lot. These are great to throw on some mashed potatoes or rice w/soy sauce. Enjoy!

Hahahaha, this part made me laugh for a while. You are funny. YAY for you for cooking! It's fun huh? I'll be thinking about recipes. I don't cook enough to know any off the top of my head....but now I'm craving taco soup :)

I really like something my family calls Apricot Chicken but it's real name is Sweet 'N' Spicy Chicken.

Recipe:
*3 tablespoons taco seasoning
*1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
*1 to 2 tablespoons canola oil
*1 jar (11 ounces) chunky salsa
*1/2 cup peach preserves
*Hot cooked rice

Directions
* Place taco seasoning in a large resealable plastic bag; add chicken and toss to coat.
* In a large skillet, brown chicken in oil until no longer pink. Combine salsa and preserves; stir into skillet. Bring to a boil. Reduce heat; cover and simmer for 2-3 minutes or until heated through Serve with rice. Yield: 4 servings.

I normally don't measure though and just put the amount of chicken I want and season and add those ingredients until it takes perfect. Yum.
